This is how it's done in Word 2003. I'm hoping it's the same in Word 2007.
File -- Page Setup -- Layout -- Headers and Footers -- Different First Page
Place a check mark in the square to the left of the words "Different First Page."

If you don't get any better answers, you can always do this by creating 2 "sections" of your document. The first section would be just the first page, and do not number it. The second section would be the rest of the document, starting on page 2. Start numbering at "1" (if that is what you want).
If you want the numbering to only show up on page 2, but you want that one numbered "2", then forget the previous paragraph and just put the page number in a header or footer, and click the box that says "First Page Different."
On word 2007 how do you make numbering start on page 2?
