I would like to know the percentages to calculate out of my paycheck,
for example, what percentage is taken out for medical, for all the taxes, etc.

Medical is the same dollar amount regardless of how much or how little you make. It is not a percentage.
OASDI is 6.2% and may be identified as FICA or social security. Medicare is 1.45%. These may be combined into a single 7.65% FICA deduction. Federal income tax may be anywhere from 0% to more than 25%, depending on how much you earn and what information was on your W-4. Any employer who attempts to use the same percentage for everyone is breaking the law. State taxes are different in each state.
